Daily Vegan Recipe - Baked sweet potatoes 🧡

 

This must be one of my favourite side dishes. An oldie but goodie. A recipe I make almost every week with different toppings and seasonings. I’ve reposted this easy recipe here:

  • 2 sweet potatoes
  • 1 avocado
  • soy yogurt or creme fraiche
  • chili, salt and pepper
  • Lime or lemon
  • Sesame seeds and basil

Cut potatoes in half length wise. Place on a baking tray and bake in the oven in 20-25 mins at 175C hot air until soft. Allow to cool. Serve with avocado, yogurt, basil, sesame seeds, chili, lemon, salt and pepper.
